There is something so special about this magical green fruit! Not only are avocados delicious and a great addition to every meal, they are also very healthy. There is no other fruit that is packed with monounsaturated fat (improves cholesterol levels and benefits brain activity), vitamin E, and vitamin B6. However, keep in mind that avocados are also high in calories. So, if you’re watching your calorie intake, remember not to overdo it.
Avocado and Egg Pizza
You like avocados, right? How about fried eggs? And pizza? Well, combining these three will give you one delicious meal – chewy crust topped with avocado mash and a fine, oozy egg. The recipe serves four.
- 1 large Hass avocado
- 1 tablespoon finely chopped cilantro
- 1 1/2 teaspoons lime juice
- 1/8 teaspoon salt
- 1/2 pound pizza dough, homemade or store-bought (see Recipe Note)
- 4 large eggs
- 1 tablespoon vegetable oil
- Hot sauce, for serving (optional)
First you’ll need to make the avocado mash. Cut the avocado, scoop the flesh, and add it into a bowl. Then, add the lime juice, salt, and cilantro. Mash until smooth and add seasoning to your preference.
After mashing the avocado, you’ll need to divide the dough into four pieces. Add some flour to a cutting board and roll each piece into a thin circle (approx. 6 inches large). To bake the dough circles, you’ll need to heat a seasoned cast iron skillet and place the dough circles in the center. Then, cook for about two minutes until the surface is bubbly and the underside browned. Then flip and cook until the other side is browned as well.
Lastly, add the avocado mixture onto each cooked dough circle. Fry the eggs and place each one on top of your small pizzas. Serve immediately.
Kiwi & Avocado Super Smoothie
Combine two superfruits and get a delicious smoothie! Packed with healthy fats and vitamin E (from avocado) and vitamin C and fiber (from the kiwi), this smoothie will keep you fresh and healthy!
- 1/2 ripe avocado
- 2 kiwi peeled
- 1/8 cup lime juice plus 1 tablespoon
- 1/8 cup – 1/4 cup Almond milk
- Honey to taste
- A few ice cubes
Well, making smoothies is very easy. Simply place the liquid ingredients in the blender first and then add fruit and ice. Start on low speed and then gradually increase the speed. Blend until you get a creamy and smooth mixture. If you’re not a fan of almond milk, you can use coconut water/milk or pineapple juice simply to add some flavor and liquid to this smoothie.
Baked Egg in Avocado
This is one of the easiest and healthiest breakfast recipes you’ll ever come across. Unlike cereal, this meal will keep you full for hours. And, the best part is you’ll only get to intake healthy fats and vitamins.
